Vitamine E/Tocopherol refers to a group of eight fatsoluble compounds that include both tocopherols and tocotrienols.
Van de vele verschillende vormen van vitamine E komt γ-tocoferol het meest voor in het Noord-Amerikaanse dieet. γTocoferol komt voor in maïsolie, sojaolie, margarine en dressings.
In het Noord-Amerikaanse dieet is Î ± -tocoferol, de biologisch meest actieve vorm van vitamine E, de tweede meest voorkomende vorm van vitamine E. Deze variant komt het meest voor in tarwekiemolie, zonnebloemolie en saffloerolie.
Als vetoplosbare antioxidant stopt het de productie van reactieve zuurstofsoorten die worden gevormd wanneer vet oxidatie ondergaat
