Lycopeen Introduction:

Lycopeen is a powerfull antioxidant. It makes tomatoes red. It is soluble in oils and insoluble in water. Lycopeen is easily absorbed by the organism and is naturally present in human plasma and tissues in higher concentrations than the other carotenoids.Tomatoes contain a variety of antioxidants such as the two carotenoids Lycopeen and Beta Carotene, Vitamin C and Vitamin E, polyphenolics such as Kaempferol and quercitin. Lycopeen is the most abundant one in red tomatoes.

Lycopeen is a carotenoid−a natural pigment that gives some vegetables and fruits their red color. It is an antioxidant (a substance that protects against cell damage).

Tomaten leveren ongeveer 80% van het lycopeen in het Amerikaanse dieet. Tomaten die met hoog vuur worden verwerkt, bevatten lycopeen in een vorm die beter door het lichaam kan worden gebruikt dan in rauwe tomaten; warmtebehandeling kan echter andere voedingsstoffen vernietigen, zoals bètacaroteen, vitamine C en vitamine E.

Dit zijn ook antioxidanten. Synthetisch lycopeen wordt door de Amerikaanse Food and Drug Administration gecategoriseerd als "algemeen erkend als veilig".
